Island-Style Coconut Bread

Ingredients:

  • 3 cups all-purpose flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1 cup sugar
  • 2 cups flaked coconut
  • 1 large egg, slightly beaten
  • 1 cup evaporated milk
  • 1 tsp. vanilla extract
  • 1/2 cup Country Crock® Spread, melted and cooled
  • 2 Tbsp. sugar, for sprinkling on top

Directions:

  1. Preheat oven to 350°. Grease 9 x 5-inch loaf pan; set aside.
  2. Combine flour, baking powder and salt in medium bowl. Stir in 1 cup sugar, then coconut; set aside.
  3. Combine egg, milk, Country Crock® Spread and vanilla in small bowl. Stir egg mixture into flour mixture just until combined. Evenly spoon into prepared pan. Sprinkle with remaining 2 tablespoons sugar.
  4. Bake 1 hour or until toothpick inserted in center comes out clean. If cake starts to brown, cover loosely with aluminum foil. Let cool 15 minutes on wire rack; remove from pan and cool completely.
  • TIP: Stir in 1/2-cup chopped glace cherries before spooning into pan.
