Preheat oven to 350°. Grease 9 x 5-inch loaf pan; set aside.
Combine flour, baking powder and salt in medium bowl. Stir in 1 cup sugar, then coconut; set aside.
Combine egg, milk, Country Crock® Spread and vanilla in small bowl. Stir egg mixture into flour mixture just until combined. Evenly spoon into prepared pan. Sprinkle with remaining 2 tablespoons sugar.
Bake 1 hour or until toothpick inserted in center comes out clean. If cake starts to brown, cover loosely with aluminum foil. Let cool 15 minutes on wire rack; remove from pan and cool completely.
TIP: Stir in 1/2-cup chopped glace cherries before spooning into pan.
