1 link chorizo sausage, finely chopped (about 1 cup)
4 eggs
2 Tbsp. water
2 green onions, thinly sliced
1/4 tsp. ground chipotle chile pepper
Directions:
Melt Country Crock® Spread in 10-inch nonstick skillet over medium heat and cook onion, stirring occasionally, until tender, about 4 minutes. Stir in chorizo and cook, stirring occasionally, until starting to brown, about 2 minutes.
Meanwhile, beat eggs, water, green onions and chile pepper with wire whisk. Add egg mixture to skillet and cook over low heat, stirring frequently, until eggs are thoroughly cooked, about 2 minutes.
