1/2 cup (1 stick) Country Crock® Spreadable Sticks
1 egg
2 egg whites
3/4 cup fat free milk
1 tsp. vanilla extract
1/2 tsp. confectioners sugar
Directions:
Preheat oven to 350°. Generously grease and flour 10-inch Bundt pan; set aside.
Combine flour, baking powder and lemon peel in medium bowl with wire whisk; set aside.
Beat granulated sugar with Country Crock® Spreadable Sticks in large mixing bowl with electric mixer, until light and fluffy, about 3 minutes. Beat in egg and egg whites, scraping sides occasionally, until well combined, about 3 minutes. Beat in milk and vanilla. Add flour mixture and beat just until combined.
Pour batter into prepared pan; spread top to smooth.
Bake 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes on wire rack; remove from pan and cool completely. Just before serving, sprinkle with confectioners sugar.
