1/2 cup (1 stick) Country Crock® Spreadable Sticks
1 egg
2 egg whites
3/4 cup fat free milk
1 tsp. vanilla extract
1/2 cup confectioners sugar
1-1/2 tsp. orange juice
2 cups sliced strawberries
Directions:
Preheat oven to 350°. Grease and lightly flour two 9-inch round cake pans; set aside.
Combine flour, baking powder and orange peel in medium bowl with wire whisk; set aside.
Beat granulated sugar with Country Crock® Spreadable Sticks in large mixing bowl, with electric mixer, until light and fluffy, about 3 minutes. Add egg and egg whites and beat, scraping sides occasionally, until well combined, about 3 minutes. Beat in milk and vanilla. Add flour mixture and beat just until combined. Spoon batter into prepared pans.
Bake 22 minutes or until toothpick inserted in centers comes out clean. Cool 10 minutes on wire racks; remove from pans and cool completely.
Combine confectioners sugar with orange juice. Arrange 1 cake layer on serving plate. Evenly top with 1 cup strawberries, then drizzle with 1/2 of the glaze. Top with remaining cake layer, strawberries and glaze.
