Roasted Parmesan Squash

Ingredients:

  • 2 Tbsp. Country Crock® Spread, melted
  • 2 Tbsp. shredded Parmesan cheese
  • 1/4 tsp. Italian seasoning
  • 1/4 tsp. garlic powder
  • 1/8 tsp. ground black pepper
  • 2 large zucchini, thinly sliced
  • 1 medium sweet onion, halved and thinly sliced

Directions:

  1. Preheat oven to 425°. Combine Country Crock® Spread, 1 tablespoon cheese, Italian seasoning, garlic powder and black pepper in small bowl.
  2. Toss vegetables with spread mixture in 11 x 7-inch shallow casserole dish. Sprinkle with remaining 1 tablespoon cheese. Bake uncovered 30 minutes or until starting to brown and vegetables are tender.
