Garlic Smashed Potato Cakes
Ingredients:
- 8 medium red potatoes
- 6 Tbsp. Country Crock® Spread, melted
- 1 tsp. dried rosemary leaves
- 1 tsp. grated lemon peel
- 1/2 tsp. garlic powder
- 1/4 tsp. coarsely ground black pepper
Directions:
- Preheat oven to 425°.
- Scrub potatoes, then pierce several times with fork; arrange on aluminum-foil-lined baking sheet. Bake 30 minutes or until potatoes are tender.
- Meanwhile, combine remaining ingredients in small bowl; set aside.
- Mash potatoes on baking sheet; form 4 patties. Drizzle with spread mixture. Bake an additional 15 minutes or until crisp.
