4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
4 Tbsp. Country Crock® Spread
1 medium onion, chopped
1 clove garlic, finely chopped
1/2 tsp. dried basil leaves, crushed
1/2 tsp. salt
1/4 tsp. ground black pepper
1 lb. plum tomatoes, chopped (about 6 medium)
1/4 cup dry white wine or chicken broth
1/2 cup heavy or whipping cream
Directions:
Season chicken, if desired, with salt and pepper. In 12-inch nonstick skillet, melt 1 tablespoon Country Crock® Spread over medium-high heat and brown chicken. Remove chicken and set aside.
In same skillet, melt remaining 3 tablespoons Spread and cook onion, garlic, salt and pepper until onion is tender, about 3 minutes. Stir in tomatoes and cook, stirring occasionally, until tender, about 4 minutes. Add wine and cook 1 minute. Stir in cream. Return chicken and any chicken juices to skillet. Simmer 5 minutes or until chicken is thoroughly cooked.
