Double Chocolate Chip Cookies

Ingredients:

  • 1-1/3 cups semi-sweet chocolate chips
  • 1-1/3 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup Country Crock® Spread
  • 3/4 cup granulated sugar
  • 3/4 cup firmly packed light brown sugar
  • 2 eggs
  • 1/2 tsp. vanilla extract
  • 1-1/2 cups chopped walnuts

Directions:

  1. Melt 1/3 cup chocolate chips; set aside.   In medium bowl, combine flour, cocoa powder, baking soda and salt; set aside.   In large bowl, with electric mixer, beat Country Crock® Spread and sugars 3 minutes or until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in reserved melted chocolate and vanilla until blended, scraping sides occasionally. With mixer on low, beat in flour mixture. Stir in walnuts and remaining 1 cup chocolate chips. Wrap dough in plastic wrap and freeze until firm, about 1 hour.   Preheat oven to 375°. On ungreased baking sheets, drop dough by level tablespoons, 2 inches apart.   Bake 9 minutes or until just set on top. On wire rack, cool 1 minute; remove from sheets and cool completely.
