Honey-Roasted Peanut Brittle

Ingredients:

  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1-1/2 cups roasted peanuts*
  • 2 Tbsp. Country Crock® Honey Spread
  • 1 tsp. baking soda

Directions:

  1. Spray baking sheet and metal spatula with nonstick cooking spray; set aside.   In 2-quart microwave-safe glass bowl, combine sugar with corn syrup. Microwave at HIGH 5 minutes or until pale yellow. With wooden spoon, stir in peanuts. Microwave at HIGH 1 to 1-1/2 minutes or until lightly golden. Immediately stir in Country Crock® Honey Spread and baking soda. Quickly pour onto prepared baking sheet and evenly spread with spatula. Mixture will be very hot! Let cool, then break into pieces. Store in tightly covered container.     *Or, substitute your favorite nuts!
