Caramelized Pear & Onion Salad

Ingredients:

  • 1/4 cup Country Crock® Spread
  • 2 large pears or apples, peeled, cored and thinly sliced
  • 1 large onion, sliced
  • 6 cups mixed salad greens or mesclun
  • Wish-Bone ® Vinaigrette Dressing
  • 1/2 cup toasted chopped walnuts or pecans (optional)
  • 1/2 cup crumbled blue or goat cheese

Directions:

  1. In 12-inch skillet, melt Country Crock® Spread over medium-high heat and cook pears and onion, stirring occasionally, 4 minutes or until tender. Reduce heat to medium and cook uncovered, stirring occasionally, 20 minutes or until pears and onion are golden brown. Serve warm pear mixture over greens. Drizzle with Dressing and garnish with walnuts and cheese.
