Chicken Rice Gumbo

Ingredients:

  • 1 1/2 lbs. boneless, skinless chicken thighs, cut into bite-size pieces
  • 1 tsp. Knorr® Reduced Sodium Chicken flavor Bouillon
  • 2 Tbsp. Country Crock® Spread, divided
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 oz. cut-up ham
  • 1 cup uncooked rice
  • 2 cloves garlic, chopped
  • 4 cups water
  • 1 1/2 cups Ragu® Old World Style® Pasta Sauce
  • 1/4 cup pitted and sliced ripe olives

Directions:

  1. Toss chicken with Knorr® Reduced Sodium Chicken flavor Bouillon. Melt 1 tablespoon Country Crock® Spread in large deep nonstick skillet over medium-high heat and cook chicken, in batches, stirring frequently, until almost cooked through, about 4 minutes. Remove chicken from skillet and set aside.
  2. Melt remaining 1 tablespoon Spread in same skillet over medium-high heat and cook onion, green pepper and ham, stirring frequently, until golden, about 6 minutes. Stir in rice and cook, stirring frequently, until golden, 2 minutes. Stir in garlic and cook 30 seconds. Add water and bring to a boil over high heat. Reduce heat to low and simmer covered, until rice is tender, about 20 minutes.
  3. Stir in Ragu® Old World Style® Pasta Sauce, chicken and olives and simmer uncovered until chicken is thoroughly cooked, about 5 minutes. Garnish, if desired, with lime wedges and chopped cilantro.
