Apple 'N Cranberry Country Bread

Ingredients:

  • 1/2 cup dried cranberries
  • 2 1/2 cups all-purpose flour
  • 1 1/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1/2 cup (1 stick) Country Crock® Buttery Sticks
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 tsp. grated orange peel
  • 1/4 cup milk
  • 1 apple, peeled, cored and coarsely chopped

Directions:

  1. Preheat oven to 350°. Grease 9 x 5-inch loaf pan; set aside.
  2. Toss dried cranberries with 1/2 tsp. of the flour. Combine remaining flour, baking powder, baking soda and salt in medium bowl; set aside.
  3. Beat Country Crock® Buttery Stickswith sugar in large bowl with electric mixer until light and fluffy, about 5 minutes. Beat in eggs, vanilla and orange peel until blended, scraping sides occasionally. Alternately beat in flour mixture and milk just until blended. Stir in apple and cranberries. Turn into prepared pan.
  4. Bake 1 hour to 1 hour 10 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes on wire rack; remove from pan and cool completely.
