Garlic Seasoned Veggies

Ingredients:

  • 1/2 cup Country Crock® Calcium plus Vitamin D
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried oregano leaves
  • 1/4 tsp. ground chipotle pepper
  • 2 tsp. lime juice
  • 2 lbs. assorted fresh vegetables, (such as zucchini, onions, bell peppers, eggplant)

Directions:

  1. Preheat oven to 450° or prepare grill.
  2. Microwave Country Crock® Calcium plus Vitamin D in small microwave-safe bowl at HIGH until melted, about 1 minute. Stir in garlic powder and dried oregano leaves, crushed; brush vegetables with seasoned Spread.
  3. Arrange vegetables in roasting pan or on grill. Roast or grill 15 minutes or until tender. Brush with remaining seasoned Spread, lime juice and serve. (You may need to reheat seasoned Spread in microwave before brushing a second time.)
