2 lbs. sweet potatoes or yams, peeled and cut into 3/4-inch chunks
6 Tbsp. Country Crock® Spread, melted and divided
1 clove garlic
1/8 tsp. salt
1/8 tsp. ground red pepper
2 Tbsp. honey
Preheat oven to 425°. Line large shallow roasting pan with aluminum foil; set aside.
Toss potatoes, 4 tablespoons melted Country Crock® Spread, garlic, salt and ground red pepper in large bowl until potatoes are well-coated; turn into prepared pan in single layer. Roast, stirring occasionally, 40 minutes or until potatoes are tender and golden.
Combine remaining 2 tablespoons. melted Spread with honey in small bowl. Stir into potatoes, then bake an additional 5 minutes. Season, if desired, with additional salt and ground black pepper.
