Mashed Honey-Ginger Sweet Potatoes

Ingredients:

  • 2 lbs. sweet potatoes [or yams], peeled and cut into 1-inch cubes
  • 1/2 cup 2% milk
  • 6 Tbsp. Country Crock® Spread
  • 2 Tbsp. firmly packed light brown sugar
  • 1 Tbsp. honey
  • 1/4 tsp. ground ginger
  • 1/4 tsp. salt

Directions:

  1. Cover potatoes with water in large saucepan and bring to a boil over high heat. Reduce heat to medium and cook until potatoes are very tender, about 15 minutes; drain.
  2. Add remaining ingredients to same saucepan and cook over medium heat, stirring occasionally, until Country Crock® Spread is melted and sugar is dissolved, about 1 minute. Remove from heat, then stir in potatoes; mash.
