Egg & Nopalitos Scramble

Ingredients:

  • 1 Tbsp. Country Crock® Spread
  • 1/2 cup finely chopped onion
  • 1 small jalapeno pepper, seeded and finely chopped
  • 1/4 cup rinsed and chopped nopalitos (cactus)
  • 4 egg whites
  • 2 eggs
  • 2 Tbsp. 2% milk
  • 1 Tbsp. chopped fresh cilantro
  • 4 corn tortillas, warmed

Directions:

  1. Melt Country Crock® Spread in large nonstick skillet over medium heat and cook onion and jalapeno pepper, stirring occasionally, until tender, about 5 minutes. Stir in nopalitos and cook, stirring occasionally, 2 minutes.
  2. Meanwhile, beat egg whites, eggs and milk with wire whisk. Add egg mixture to skillet and cook over low heat, stirring frequently, until eggs are thoroughly cooked, about 2 minutes. Sprinkle with cilantro and serve with tortillas.
