Spring Vegetable Macaroni & Cheese Casserole

Ingredients:

  • 1/4 cup Country Crock® Spread , melted
  • 2 1/2 cups 2% milk
  • 1 package Knorr® Spring Vegetable recipe mix
  • 12 ounces rotini pasta , cooked and drained
  • 4 cups assorted frozen vegetables , thawed
  • 1 cup finely shredded low fat cheddar cheese , divided

Directions:

  1. Preheat oven to 400°. Combine Country Crock® Spread , milk and recipe mix in large bowl. Stir in hot rotini, vegetables, and ¾ cup cheese; toss. Pour into 13 x 9-inch baking dish. Sprinkle top with remaining 1/4 cup cheese.
  2. Bake 30 minutes or until heated through and bubbly around edges.
