Cranberry Oatmeal Cookies

Ingredients:

  • 1 1/4 cups uncooked quick or old-fashioned oats
  • 3/4 cup all-purpose flour
  • 3/4 cup firmly packed light brown sugar
  • 3/4 cup dried cranberries or raisins
  • 6 Tbsp. Country Crock® Spread
  • 1 egg
  • 1 tsp. vanilla extract
  • 3/4 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. grated lemon peel, (optional)

Directions:

  1. Preheat oven to 350°.
  2. Combine all ingredients in large bowl and stir with wooden spoon until well mixed; set aside. Drop by rounded tablespoons on ungreased baking sheets, 2 inches apart.
  3. Bake 12 minutes or until edges are light golden. Let stand 1 minute on wire rack; remove from sheets and cool completely.
