1/2 cup coarsely chopped mandarin oranges, well drained
2 Tbsp. sugar, for sprinkling tops
Preheat oven to 350°. Grease 12-cup muffin pan; set aside.
Combine flour, baking soda and cinnamon in medium bowl; set aside.
Beat Country Crock® Calcium plus Vitamin D with 1-1/4 cups sugar in large bowl with electric mixer until light and fluffy, about 1 minute. Beat in eggs and orange peel. Alternately beat in flour mixture and buttermilk on low speed just until blended, beginning and ending with flour mixture. Fold in raisins and oranges. Evenly spoon into prepared pan, then sprinkle with remaining 2 tablespoons sugar.
Bake 20 minutes or until toothpick inserted in centers comes out clean. Cool 10 minutes on wire rack; remove from pan and cool completely.
