Broccoli Cheese Soup


  • 1/3 cup Country Crock® Spread
  • 1 small onion, chopped
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup milk
  • 1 box (10 oz.) frozen chopped broccoli
  • 8 ounces coarsely chopped American cheese
  • Pinch ground black pepper


  1. In 4-quart saucepot, melt Country Crock® Spread over medium heat and cook onion, stirring occasionally, 5 minutes or until tender. With wire whisk, whisk flour and broth in bowl until blended. Stir into saucepot and bring to a boil, whisking occasionally. Reduce heat and simmer 2 minutes.
  2. Whisk in milk and bring to a boil over medium-high heat. Reduce heat to low and simmer, stirring occasionally, 2 minutes. Stir in broccoli and return to a boil. Remove from heat, then stir in cheese and pepper. Let stand covered 2 minutes. Stir until smooth
