Buttery Citrus Sauteed Vegetables

Ingredients:

  • 1 1/2 lbs. mixed vegetables (such as red onions, zucchini, asparagus, bell peppers), cut into bite-size pieces
  • 3 Tbsp. Country Crock® Spread
  • 1/4 cup loosely packed fresh parsley leaves
  • 1 clove garlic, finely chopped
  • 1/2 tsp. grated lemon peel

Directions:

  1. Heat Country Crock® Spread in 12-inch non-stick skillet; cook vegetables until tender-crisp.
  2. Combine parsley, garlic and lemon peel in small bowl; evenly sprinkle over vegetables in skillet; cook 1 minute longer.
