Cranberry-Lemon Sugar Cookies

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup Country Crock® Spread
  • 1 1/4 cups granulated sugar, divided
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 tsp. grated lemon peel
  • 1 cup dried cranberries

Directions:

  1. Preheat oven 350°.
  2. Combine flour, baking soda, baking powder and salt in medium bowl; set aside.
  3. Beat Country Crock® Spread and 1 cup sugar in large bowl with electric mixer until light and fluffy. Beat in egg, vanilla and peel until blended. Gradually beat in flour mixture just until blended. Stir in cranberries.
  4. Drop tablespoonfuls dough 2-inches apart onto ungreased baking sheets. Sprinkle with remaining 1/4 cup sugar.
  5. Bake 12 minutes or until edges are slightly golden. Cool 2 minutes on wire rack; remove cookies from sheets and cool completely.
