Cranberry-Lemon Sugar Cookies

Ingredients:

  • 1 cup Country Crock® Spread
  • 1 cup PLUS 1 Tbsp. granulated sugar, divided
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 tsp. grated lemon peel
  • 2 1/2 cups all-purpose flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup dried cranberries

Directions:

  1. Preheat oven 350°.
  2. Stir Country Crock® Spread, 1 cup sugar, egg, vanilla and lemon peel in large bowl with wooden spoon until well combined.
  3. Stir in flour baking soda, baking powder and salt just until blended. Stir in cranberries.
  4. Drop tablespoonfuls dough 2-inches apart onto ungreased baking sheets. Sprinkle with remaining 1 tablespoon sugar.
  5. Bake 12 minutes or until edges are slightly golden. Cool 2 minutes on wire rack; remove cookies from sheets and cool completely.
