Spicy Tropical Coconut Rice With Shrimp

Ingredients:

  • 2 Tbsp. Country Crock® Spread
  • 1 cup chopped onion
  • 1 cup uncooked rice
  • 1 habanero pepper, seeded and finely chopped
  • 2 cups water
  • 1/4 cup coconut milk
  • 1 Knorr® Reduced Sodium Chicken flavored Bouillon Cube, crumbled
  • 2 cups fresh pineapple chunks
  • 1 cup mango cubes
  • 1 lb. uncooked small shrimp, peeled and deveined

Directions:

  1. Melt Country Crock® Spread in deep 12-inch skillet over medium heat and cook onion, stirring frequently, until tender, about 5 minutes. Stir in rice and habanero pepper and cook, stirring occasionally, until rice is golden, about 4 minutes.
  2. Stir in water, coconut milk and Knorr® Reduced Sodium Chicken flavor Bouillon Cube. Bring to a boil over high heat. Stir in pineapple and mango. Reduce heat to low and simmer covered 18 minutes. Stir in shrimp and continue to cook 4 minutes until shrimp turn pink and rice is tender.
