Lemon Bundt Cake

Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1 Tbsp. grated lemon peel
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) Country Crock® Spreadable Sticks
  • 1 egg
  • 2 egg whites
  • 3/4 cup fat free milk
  • 1 tsp. vanilla extract
  • 1/2 tsp. confectioners sugar

Directions:

  1. Preheat oven to 350°. Generously grease and flour 10-inch Bundt pan; set aside.
  2. Combine flour, baking powder and lemon peel in medium bowl with wire whisk; set aside.
  3. Beat granulated sugar with Country Crock® Spreadable Sticks in large mixing bowl with electric mixer, until light and fluffy, about 3 minutes. Beat in egg and egg whites, scraping sides occasionally, until well combined, about 3 minutes. Beat in milk and vanilla. Add flour mixture and beat just until combined.
  4. Pour batter into prepared pan; spread top to smooth.
  5. Bake 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes on wire rack; remove from pan and cool completely. Just before serving, sprinkle with confectioners sugar.
