Melt Country Crock® Spread in 12-inch nonstick skillet over medium heat and cook red pepper, stirring occasionally, until tender, about 4 minutes. Stir in garlic and cook 30 seconds. Increase heat to medium-high and add spinach. Cook, stirring frequently, until spinach is just wilted, about 2 minutes. Just before serving, squeeze with lemon and serve with lemon wedges if desired.
