Garlic Smashed Potato Cakes

  • 8 medium red potatoes
  • 6 Tbsp. Country Crock® Spread, melted
  • 1 tsp. dried rosemary leaves
  • 1 tsp. grated lemon peel
  • 1/2 tsp. garlic powder
  • 1/4 tsp. coarsely ground black pepper

Directions:

  1. Preheat oven to 425°.
  2. Scrub potatoes, then pierce several times with fork; arrange on aluminum-foil-lined baking sheet. Bake 30 minutes or until potatoes are tender.
  3. Meanwhile, combine remaining ingredients in small bowl; set aside.
  4. Mash potatoes on baking sheet; form 4 patties. Drizzle with spread mixture. Bake an additional 15 minutes or until crisp.
  • To make ahead, bake potatoes and refrigerate up to 1 day.
