Apple Maple Upside-Down Cake

  • 3 Granny Smith apples , peeled, cored, halved
  • 6 Tbsp. Country Crock® Spreadable Sticks
  • 1/4 cup pure maple syrup
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. ground ginger
  • 3/4 cup buttermilk


  1. Preheat oven to 350°.
  2. Cut each of 2 apple halves into 8 slices; set aside. Grate remaining apple on large holes of grater; put into medium bowl.
  3. Put 2 Tbsp. Country Crock® Spreadable Sticks and maple syrup in small saucepan. Heat over medium heat, swirling pan occasionally, until combined, about 4 minutes. Pour into 9-in. round baking pan. Place sliced apples in concentric circles over maple mixture, overlapping as needed.
  4. Beat sugar and remaining 4 Tbsp.Country Crock® Spreadable Sticks in large bowl with electric mixer on medium speed until light and fluffy, about 3 minutes. Beat in eggs one at a time.
  5. Whisk flour, salt, baking powder, baking soda, cinnamon, nutmeg, and ginger in another large bowl. Add buttermilk to bowl with grated apple. Alternately add buttermilk and flour mixtures to mixer in three additions, ending with flour mixture; beat just until combined. Pour over apples in baking pan; smooth top.
  6. Bake 50 to 55 minutes or until golden. Remove to wire rack to cool 45 minutes. Place serving plate on top of pan and flip over, tapping bottom of pan to release cake.
