Stuffed Cinnamon Raisin French Toast

Ingredients:

  • 1 egg
  • 1 egg white
  • 1/2 cup skim milk
  • 2 Tbsp. sugar
  • 1/2 tsp. vanilla extract
  • 4 ounces lowfat cream cheese
  • 8 slices cinnamon raisin bread
  • 2 Tbsp. Country Crock® Spread
  • Maple syrup (optional)

Directions:

  1. Beat egg and egg white in shallow dish. Add milk, sugar and vanilla and combine.
  2. Evenly spread cream cheese on 1 side of each slice of bread. Sandwich together to make 4 sandwiches. Dip sandwiches in egg mixture, coating well.
  3. Melt Country Crock® Spread in large nonstick skillet over medium heat and cook sandwiches, turning once until lightly browned, about 6 minutes.
  4. Cut in half and serve, if desired, with maple syrup.
