Chorizo Queso Creamy Mashed Potatoes

Ingredients:

  • 3 medium potatoes (about 1-1/4 lbs.), peeled and cut into chunks
  • 1/4 cup Country Crock® Spread, divided
  • 1/2 cup chopped chorizo sausage, (about 2 oz.)
  • 1/4 cup milk
  • 1/4 cup crumbled queso fresco
  • 1/4 tsp. salt
  • 1 pinch ground black pepper

Directions:

  1. Cover potatoes with water in medium saucepan and bring to a boil over high heat. Reduce heat to low and simmer uncovered until potatoes are very tender, about 15 minutes.
  2. Meanwhile, melt 1 tablespoon Country Crock® Spread in medium skillet over medium heat and cook chorizo until browned. Remove from heat and set aside.
  3. Drain potatoes and return potatoes to saucepan; mash. Stir in remaining 3 tablespoons Spread, chorizo and remaining ingredients.
