Creamy Crock Mac 'N Cheese

Ingredients:

  • 8 ounces elbow macaroni
  • 1 1/2 cups 2% milk
  • 1/4 cup Country Crock® Spread
  • 2 Tbsp. flour
  • 1 1/2 cups shredded reduced fat cheddar cheese

Directions:

  1. Cook pasta in large pot according to package directions.
  2. Meanwhile, whisk milk, Country Crock® Spread and flour in large saucepan. Bring to a boil over medium-high heat, whisking frequently. Reduce heat and cook, stirring occasionally, until thickened, about 5 minutes. Stir in cheese until melted; remove from heat.
  3. Drain pasta; return to pot and toss with sauce.

TIP: Want to get more good fats into your diet? Sprinkle servings with this delicious crunchy topping. Melt 2 tablespoons Spread in large nonstick skillet over medium heat and cook 1/2 cup fresh whole grain bread crumbs, 1/3 cup chopped walnuts and 2 tablespoons flax seeds over medium heat, stirring, until toasted, about 5 minutes.
