Creamy Crock Mac 'n Cheese Makeover Edition

Ingredients:

  • CROCK MAC 'N CHEESE:
  • 8 ounces elbow macaroni
  • 1 1/2 cups 2% milk
  • 1/4 cup Country Crock® Spread
  • 2 Tbsp. flour
  • 1 1/2 cups shredded reduced fat cheddar cheese
  • GOOD FATS TOPPING:
  • 2 Tbsp. Country Crock® Spread
  • 1/2 cup fresh whole grain bread crumbs
  • 1/3 cup chopped walnuts
  • 2 Tbsp. flax seeds

Directions:

  1. For CROCK MAC 'N CHEESE, cook pasta in large pot according to package directions. Meanwhile, whisk milk, Country Crock® Spread and flour in large saucepan. Bring to a boil over medium-high heat, whisking frequently. Reduce heat and cook, stirring occasionally, until thickened, about 5 minutes. Stir in cheese until melted; remove from heat.
  2. Drain pasta; return to pot and toss with sauce.
  3. FOR GOOD FATS TOPPING, melt Country Crock® Spread in large nonstick skillet over medium heat and cook bread crumbs, walnuts and flax seeds, stirring, until toasted, about 5 minutes. Sprinkle servings evenly with topping.
