Buttery Peach Topped Grilled Pork Chops

Ingredients:

  • 4 Tbsp. Country Crock® Spread, divided
  • 1 cup chopped red onion
  • 2 large ripe peaches, chopped, (about 2 cups)
  • 2 Tbsp. chopped fresh basil leaves
  • 1/4 tsp. salt
  • 4 (1/2-inch thick) lean center cut pork chops

Directions:

  1. Melt 2 tablespoons Country Crock® Spread in large nonstick skillet over medium-high heat and cook onions, stirring occasionally, until golden and tender, about 7 minutes. Add peaches and cook, stirring occasionally, until slightly softened, about 3 minutes. Remove from heat and stir in basil, 1 tablespoon Spread and salt (Stir in 1 to 2 tablespoons water if mixture seems dry.)
  2. Brush chops with remaining 1 tablespoon Spread. Sprinkle, if desired, with ground black pepper to taste. Grill chops, turning once, until done.
  3. Spoon peach and onion mixture over chops.
