Easy Clean-Up Buttery Fish & Veggie Dinner

Ingredients:

  • 1 lb. Brussels sprouts, thinly sliced, (about 4 cups)
  • 6 Tbsp. Country Crock® Spread
  • 1/2 cup sliced onion
  • 4 (6 oz.) cod fillets
  • 1/3 cup panko bread crumbs
  • 1/2 tsp. minced garlic
  • 4 tsp. Parmesan cheese

Directions:

  1. Preheat oven to 450°. Line 2 baking sheets with aluminum foil. Toss Brussels sprouts and onion with 3 tablespoons Country Crock® Spread on 1 prepared pan. Arrange cod on other prepared pan. Combine remaining 3 tablespoons Spread, crumbs and garlic in small bowl; sprinkle evenly over cod.
  2. Bake 15 minutes or until Brussels sprouts are lightly browned and tender and cod flakes with a fork. Sprinkle Brussels sprouts with Parmesan; toss.
  3. Spoon Brussels sprouts on plates and top with cod.
