Chicken Stew

Ingredients:

  • 2 Tbsp. Country Crock® Spread, divided
  • 1 medium onion, finely chopped
  • 1 clove garlic, finely chopped
  • 2 cups reduced sodium chicken broth
  • 1 large all-purpose potato, finely grated
  • 1 tsp. finely chopped fresh rosemary leaves (use more if desired)
  • 4 boneless, skinless chicken thighs (about 1-1/4 lb.), cut into chunks
  • 2 carrots, cut into thick slices
  • 1 turnip or parsnip (about 1/4 lb.), cut into thick slices
  • 1/4 lb. cabbage, sliced
  • 2 Tbsp. chopped fresh flat-leaf parsley leaves

Directions:

  1. Melt 1 Tbsp. Country Crock® Spread in 4-qt. saucepot and cook onion, stirring occasionally, until tender, about 3 minutes. Stir in garlic and cook 30 seconds. Stir in chicken broth, potato and rosemary. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 5 minutes.
  2. Melt remaining 1 Tbsp. Country Crock® Spread in large skillet and brown chicken over medium-high heat, turning once, about 10 minutes. Add chicken to saucepot, then stir in carrots and turnip. Bring to a boil over high heat. Reduce heat to low and simmer covered, stirring occasionally, 30 minutes or until chicken is very tender. Stir in cabbage and parsley; simmer 5 minutes.
