Bacon & Cheddar Stuffed Potatoes

Ingredients:

  • 4 medium potatoes, baked
  • 1/4 cup Country Crock® Spread
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 4 green onions, sliced
  • 4 slices cooked bacon, crumbled

Directions:

  1. Preheat oven to 400°.
  2. Cut each potato in half lengthwise; scoop pulp from each half and place in medium bowl. Add Country Crock® Spread; mash.
  3. Stir in remaining ingredients until blended. Spoon potato mixture back into potato shells. Arrange on baking sheet.
  4. Bake 25 to 30 minutes or until heated through.
