Shortbread Cookies

Ingredients:

  • 2 cups all-purpose flour
  • 3/4 tsp. salt
  • 1 cup (2 sticks) Country Crock® Buttery Sticks–Unsalted
  • 1/2 cup confectioners sugar
  • 1 tsp. vanilla extract

Directions:

  1. Line 2 rimmed baking sheets with parchment paper. Whisk flour and salt in medium bowl; set aside.
  2. Beat Country Crock® Buttery Sticks–Unsalted in large bowl with electric mixer until fluffy, about 3 minutes. Beat in sugar and vanilla until pale and fluffy, scraping down sides of bowl occasionally, about 2 minutes. Beat in flour mixture on low speed just until blended and dough sticks together when squeezed with fingers.
  3. Divide dough in half; flatten into disks. Wrap in plastic wrap and refrigerate at least 1 hour or until firm enough to roll.
  4. Roll 1 disk dough to 1/4-inch thickness on lightly floured surface. Cut into shapes using cookie cutters. Arrange on prepared baking sheets. Reroll scraps and repeat with remaining disk. Refrigerate until firm, at least 30 minutes.
  5. Preheat oven to 325°. Bake 13 to 15 minutes until firm and golden. Cool 2 minutes on wire rack; remove from pan and cool completely.

TIME-SAVING TIP: after refrigerating cookie dough at least 1 hour, roll dough into 1-inch balls and transfer to prepared baking sheets. Dip bottom of a drinking glass in cold water and gently press down on cookie dough, flattening slightly (to about 1 1/2-inch diameter). Bake cookies as directed above.

TIP: Cookies can be baked ahead and frozen in an airtight container or food storage bag up to 3 weeks. Thaw at room temperature 30 minutes or until no longer frozen.
