Cranberry Oatmeal Cookies

Ingredients:

  • 1 cup Country Crock® Buttery Sticks
  • 1 cup firmly packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 2 1/4 cups old-fashioned rolled oats
  • 1 1/2 cups all-purpose flour
  • 2 tsp. ground cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup dried cranberries or raisins

Directions:

  1. Preheat oven to 350°.
  2. Beat Country Crock® Buttery Sticks, light brown sugar and granulated sugar in large bowl with electric mixer until light and fluffy, about 2 minutes. Beat in eggs and vanilla. Beat in oats, flour, cinnamon, baking soda and salt on low speed just until blended. Stir in dried cranberries.
  3. Drop by rounded tablespoonfuls 3-inches apart on ungreased baking sheets.
  4. Bake 11 minutes or until edges are lightly golden. Cool 1 minute on wire rack; remove from baking sheets and cool completely.
