Suzanne's Snowball Cookies

Ingredients:

  • 2 sticks Country Crock® Buttery Sticks
  • 1/4 cup granulated sugar
  • 8 ounces pecans, finely ground
  • 2 cups all-purpose flour
  • 1 1/2 cups confectioners sugar

Directions:

  1. Beat Country Crock® Buttery Sticks and granulated sugar in large bowl with electric mixer on low speed until blended. Beat in ground pecans and flour. Chill dough at least 1 hour or overnight.
  2. Preheat oven to 300°. Roll tablespoonfuls dough into 1-inch balls and place 1-inch apart on ungreased baking sheets.
  3. Bake 40 minutes. Cool on wire rack 3 minutes. Place confectioners sugar in pie plate or wide bowl. Roll hot cookies in confectioners sugar to coat. Set on racks to cool. Roll cookies a second time in confectioners sugar once cooled.
