Our recipe for Monster Cookies is the perfect spooky treat to make for Halloween or anytime you need a kid-friendly treat. This easy recipe takes cake mix and turns it into soft, chewy, colorful cookies. These Monster Eye Cookies are fun to eat, but even more fun to make. The whole family will love rolling the colorful dough into cookies and pressing edible candy eyeballs into the warm cookies.

Instructions

  1. Preheat oven to 350 degrees. Line baking sheet with parchment paper.
  2. Add vegan cream cheese, egg and vanilla to large bowl and beat with electric mixer until fluffy. Add Country Crock Plant Butter and beat on low speed until well incorporated. Slowly add cake mix to batter and beat on low speed until cake mix is fully incorporated. Divide batter into 3 equal parts.
  3. Add food coloring to each individual bowl and mix until the dough is evenly colored. Refrigerate dough for at least 30 minutes.
  4. Remove cookie dough from refrigerator and roll each batch into 8 equal sized balls. Arrange balls on prepared baking sheet and pat down gently.
  5. Bake 10 to 12 minutes. Remove cookies from oven. Immediately press candy eyeballs into cookies. Let cookies stand on baking sheet for 5 minutes. Remove cookies to wire rack and cool completely. Arrange on serving platter and enjoy.
