Ingredients

Sugar Cookie Crust
  • 1/2 cup Country Crock® Original Spread Original Spread
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons cornstarch
Cream Cheese Topping

Instructions

Sugar Cookie Crust
  1. Preheat oven to 350 F.
  2. In a medium bowl, whisk all-purpose flour, salt, baking powder, baking soda, and cornstarch together. Keep aside.
  3. Cream Country Crock Spread for 1 minute in a stand mixer fitted with paddle attachment on medium speed.
  4. Add sugar and beat on medium speed until fluffy and light in color.
  5. Beat in egg and vanilla. Make sure to scrape down the sides often.
  6. Add dry ingredients to wet ingredients slowly with the stand mixer running on low speed, until completely combined.
  7. Cover the dough tightly with cling wrap and chill in the refrigerator for 30 minutes
  8. Grease a 12 - inch pizza pan and spread chilled cookie dough in an even flat circle.
  9. Bake for 14-15 minutes or until the edges are very lightly browned.
  10. Allow the crust to cool completely before topping.
For Cream Cheese Topping
  1. While the crust is cooling, prepare topping by adding cream cheese and Country Crock Spread to a stand mixer with a paddle attachment, and beat on medium speed until smooth.
  2. Add confectioners' sugar and milk, beat for about 2 minutes, until desired consistency is reached.
  3. Spread a thick layer of cream cheese topping over the cooled sugar cookie crust.
  4. Decorate it with assorted berries.
  5. Cut into slices, serve, and enjoy!
