Veggie Lo Mein Stir Fry

Ingredients

Sauce ingredients
  • 2/3 cup water
  • 1/4 cup soy sauce
  • 3 garlic cloves, chopped
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 2 teaspoons stir-in ginger paste

Instructions

  1. Bring a large pot of water to a boil. Cook and drain the lo mein noodles according to the instructions on the package.
  2. Meanwhile make the sauce by combining all of the ingredients in a blender, and blend on high speed until smooth.
  3. Melt the Country Crock® Original Spread in a large skillet set over medium heat. Add the broccoli, red bell pepper, and salt and cover with a tight fitting lid. Cook the vegetables until tender, 4-8 minutes. Transfer the cooked vegetables to a plate and keep aside.
  4. Pour the sauce into the hot skillet and simmer for 2 minutes or until it has thickened slightly. Add the vegetable back to the pan, along with the cooked and drained noodles. Toss in the sauce and simmer until heated through. Fold in the scallions and serve immediately.
