Zesty Royal Icing
  • Zest of 2 limes
  • Zest of 1 large orange
  • Zest of 2 lemons
  • 4 cups confectioners sugar
  • 10 tablespoons lukewarm water
  • 3 small bowls of ice water for zests

Instructions

  1. Whisk the flour, baking powder, and salt together in a medium sized bowl.
  2. In a large bowl, using a hand mixer, beat the Country Crock® Plant Butter and sugar on high until smooth. Add the egg, vanilla, and almond extract until combined. Make sure you scrape down the sides of the bowl as you're beating.
  3. Add the dry ingredients to the wet ingredients and beat until combined. Divide the dough into 2 equal parts. Place each piece onto a lightly floured surface and roll into a disk. Cover in cling wrap and refrigerate for at least 1 hour.
  4. Once chilled, preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper and set aside. On a floured surface roll out each dough to ¼ inch thickness. Using a cookie cutter, cut your cookies into desired shapes and place on the baking sheets. Retool the remaining dough and continue.
  5. Bake for 12 minutes until lightly browned around the edges.
  6. While your cookies are baking, make your Royal icing and zest your fruit. Peel each fruit with a zester and place the zests into ice water to curl.
  7. Using a hand mixer, mix all the icing ingredients together in a medium sized bowl and set aside. Remove the cookies from the oven and allow them to cool on a wire rack before icing.
  8. Once cooled, drizzle with Royal icing and sprinkle with desired zests.
