2 lbs. sweet potatoes or yams, peeled and cut into 1-inch cubes
1/2 cup 2% milk
6 Tbsp. Country Crock® Spread
2 Tbsp. firmly packed light brown sugar
1 Tbsp. honey
1/4 tsp. ground ginger
1/4 tsp. salt
Cover potatoes with water in large saucepan and bring to a boil over high heat. Reduce heat to medium and cook until potatoes are very tender, about 15 minutes; drain.
Add remaining ingredients to same saucepan and cook over medium heat, stirring occasionally, until Country Crock® Spread is melted and sugar is dissolved, about 1 minute. Remove from heat, then stir in potatoes; mash.
