1 small jalapeno pepper, seeded and finely chopped
1/4 cup rinsed and chopped nopalitos (cactus)
6 egg whites
2 Tbsp. 2% milk
1 Tbsp. chopped fresh cilantro
4 corn tortillas, warmed
Melt Country Crock® Spread in large nonstick skillet over medium heat and cook onion and jalapeno pepper, stirring occasionally, until tender, about 5 minutes. Stir in nopalitos and cook, stirring occasionally, 2 minutes.
Meanwhile, beat egg whites, eggs and milk with wire whisk. Add egg mixture to skillet and cook over low heat, stirring frequently, until eggs are thoroughly cooked, about 2 minutes. Sprinkle with cilantro and serve with tortillas.
