Preheat oven to 375°. Grease and flour 9 x 5-inch loaf pan; set aside.
Combine Country Crock® Spread, sugar, eggs and vanilla in large bowl with wooden spoon until blended. Stir in flour, baking powder, cinnamon, salt and baking soda. Stir in carrots, raisins, pecans, coconut and apple. Spoon batter into prepared pan.
Bake 1 hour, 15 minutes or until toothpick inserted in center comes out clean. Cool on wire rack 30 minutes; remove from pan and cool completely.
