Cranberry-Lemon Sugar Cookies

Ingredients:
-
1 cup Country Crock® Spread
-
1 cup PLUS 1 Tbsp. granulated sugar, divided
-
1 egg
-
1 tsp. vanilla extract
-
2 tsp. grated lemon peel
-
2 1/2 cups all-purpose flour
-
3/4 tsp. baking soda
-
1/2 tsp. baking powder
-
1/2 tsp. salt
-
1 cup dried cranberries
Directions:
- Preheat oven 350°.
- Stir Country Crock® Spread, 1 cup sugar, egg, vanilla and lemon peel in large bowl with wooden spoon until well combined.
- Stir in flour baking soda, baking powder and salt just until blended. Stir in cranberries.
- Drop tablespoonfuls dough 2-inches apart onto ungreased baking sheets. Sprinkle with remaining 1 tablespoon sugar.
- Bake 12 minutes or until edges are slightly golden. Cool 2 minutes on wire rack; remove cookies from sheets and cool completely.
