Italian Peas & Tomatoes

Ingredients:

  • 3 Tbsp. Country Crock® Spread, divided
  • 1 medium yellow onion, chopped
  • 3 cups frozen green peas, thawed
  • 2 medium plum tomatoes, chopped
  • 1 tsp. finely chopped garlic
  • 1/4 tsp. ground black pepper
  • 1/2 cup loosely packed fresh basil leaves, coarsely chopped (optional)

Directions:

  1. Melt 2 tablespoons Country Crock® Spread in 12-inch nonstick skillet over medium-high heat and cook onion, stirring occasionally, until tender, about 10 minutes.
  2. Stir in peas, tomatoes, garlic and pepper and cook, stirring frequently, until tomatoes and peas are tender, about 3 minutes.
  3. Stir in remaining 1 tablespoon Spread and basil.
