Preheat oven to 375°. Beat sugar with Country Crock® Spread in large bowl with electric mixer until light and fluffy, about 2 minutes. Beat in egg, egg yolk and vanilla scraping sides occasionally, until blended. Beat in flour, baking powder, baking soda and salt until blended.
Roll dough 1/4-inch thick on lightly floured surface with lightly floured rolling pin. Cut into shapes using 3-inch cookie cutters. Arrange on ungreased baking sheets 2-inches apart.
Bake 10 to 12 minutes until edges are lightly golden. Cool 2 minutes on wire rack; remove from sheets and cool completely.
