Grilled Salmon

Freshly grilled salmon and risotto made creamy with Country Crock® Spread. The perfect balance between tangy, sweet and savory.

  • 3 cups boiling water
  • 1 cube Knorr® Reduced Sodium Chicken flavor Bouillon, crumbled
  • 4 Tbsp. Country Crock® Spread, divided
  • 1 medium onion, finely chopped
  • 1 cup uncooked arborio rice
  • 1/2 cup dry white wine or chicken broth
  • 2/3 cup frozen green peas, thawed
  • Grated peel and juice of 1 lemon
  • 1/4 cup chopped fresh flat-leaf parsley leaves
  • 4 salmon fillets


  1. Pour boiling water over Knorr® Reduced Sodium Chicken flavor Bouillon and stir until Bouillon is dissolved; keep warm.
  2. Melt 1 Tbsp. Country Crock® Spread in medium skillet over medium heat and cook onion, stirring occasionally, until onion is tender, about 4 minutes. Stir in uncooked rice and cook, stirring occasionally, until rice is coated, about 2 minutes. Stir in wine and cook until liquid is absorbed, about 1 minute.
  3. Reduce heat to low and add hot broth mixture, 1/2 cup at a time, stirring constantly, until all liquid is absorbed and rice is slightly creamy and just tender. Stir in peas, 1 Tbsp. Country Crock® Spread, lemon peel and parsley.
  4. Top salmon with remaining 2 Tbsp. Country Crock® Spread and lemon juice. Grill or broil until salmon flakes with a fork. Serve grilled salmon over hot risotto.
