Pour boiling water over Knorr® Reduced Sodium Chicken flavor Bouillon and stir until Bouillon is dissolved; keep warm.
Melt 1 Tbsp. Country Crock® Spread in medium skillet over medium heat and cook onion, stirring occasionally, until onion is tender, about 4 minutes. Stir in uncooked rice and cook, stirring occasionally, until rice is coated, about 2 minutes. Stir in wine and cook until liquid is absorbed, about 1 minute.
Reduce heat to low and add hot broth mixture, 1/2 cup at a time, stirring constantly, until all liquid is absorbed and rice is slightly creamy and just tender. Stir in peas, 1 Tbsp. Country Crock® Spread, lemon peel and parsley.
Top salmon with remaining 2 Tbsp. Country Crock® Spread and lemon juice. Grill or broil until salmon flakes with a fork. Serve grilled salmon over hot risotto.
