  • 2 Tbsp. Country Crock® Spread, divided
  • 1 medium onion, chopped
  • 3 cloves garlic, finely chopped
  • 1 tsp. ground cumin
  • 4 cups boiling water
  • 1 cube Knorr® Reduced Sodium Chicken flavor Bouillon Cube(s), crumbled
  • 1 1/2 cups red lentils, rinsed and drained
  • 1 large carrot, chopped
  • 1 medium all-purpose potato, peeled and diced
  • 2 Tbsp. finely chopped fresh cilantro


  1. Melt 1 Tbsp. Country Crock® Spread in large saucepan over medium heat and cook onion and garlic, stirring occasionally, until onion is almost tender, about 5 minutes. Stir in cumin and cook, stirring frequently, 1 minute. Stir in boiling water, Knorr® Reduced Sodium Chicken flavor Bouillon Cube, lentils, carrot and potato. Bring to a boil over high heat. Reduce heat to low and simmer partially covered, stirring occasionally, 30 minutes or until lentils and vegetable are tender.
  2. Stir in remaining Country Crock® Spread and cilantro. Puree soup in batches in blender and garnish, if desired, with low fat plain yogurt.
