Melt 1 Tbsp. Country Crock® Spread in large saucepan over medium heat and cook onion and garlic, stirring occasionally, until onion is almost tender, about 5 minutes. Stir in cumin and cook, stirring frequently, 1 minute. Stir in boiling water, Knorr® Reduced Sodium Chicken flavor Bouillon Cube, lentils, carrot and potato. Bring to a boil over high heat. Reduce heat to low and simmer partially covered, stirring occasionally, 30 minutes or until lentils and vegetable are tender.
Stir in remaining Country Crock® Spread and cilantro. Puree soup in batches in blender and garnish, if desired, with low fat plain yogurt.
